Preheat the oven to 170C Grease and line an 8-inch cake tin |

| 225 g flour 3 tsp baking powder 1/2 tsp cinnamon 1/4 tsp star anise 50 g ground almonds |
Mix the dry ingredients |
| 400 g apples |
Peel, core and chop the apples finely (5mm pieces) |
| 225 g sugar 150 g butter |
Warm the butter and sugar in the microwave Cream the butter and sugar |
| 1 tsp almond essence 2 eggs |
Add the eggs and almond essence and mix in Add the dry ingredients and mix in Add the apples Put into baking tin |
| 25 g flaked almonds |
Sprinkle flaked almonds on top Cook for 1 hour 15 mins |
